Chicken Tikka Masala

it's been a while since I posted a recipe, so I thought I'd share this one I made the other weekend.

I am a curry lover and a couple of weekends ago I had a craving for Indian food and played around with it. Chicken tikka masala recipe and I was pleasantly surprised. Now I'm not saying this is totally authentic, but was it really flavorful and did it satisfy my craving? Have you ever tried instant pot roast? if not then try it must.



Ingredients


  • 2 pounds boneless, skinless chicken - I used breast meat
  • 6 garlic cloves, finely grated
  • 6 cps ground turmeric
  • 3 tsp Garam Masala
  • 2 teaspoons ground coriander
  • 3 tsp of ground cumin
  • 1½ cups of yogurt
  • 1 tablespoon of salt
  • 3 tablespoons of ghee or vegetable oil
  • 1 small onion, thinly sliced
  • ¼ cup tomato paste
  • 1/2 teaspoon crushed red pepper flakes (more if you want a little more heat)
  • 1 28-ounce can whole peeled tomatoes
  • 2 cups thick cream

Instructions


  1. Make a spice mix by combining the garlic, turmeric, garam masala, coriander, and cumin in a bowl. Divide this spice mixture into 2 equal servings
  2. In medium / large bowl, mix yogurt, salt, and half of the spice mixture until well combined
  3. Cut the chicken breasts into strips 1 to 1.5 inches long and add them to the yogurt mixture. Cover and chill in the refrigerator for at least 4-6 hours (or more)
  4. Cover the remaining spice mixture, to use later
  5. Heat over medium heat the oil (or ghee) in a large saucepan and add the sliced ​​onion, tomato paste, and chili flakes and cook for about 5 minutes.
  6. Add the remaining half of the spice mixture and cook for about 5 minutes, stirring frequently
  7. Smash the tomatoes with your hands and add them to the pot. Bring to a boil and simmer for about 10 minutes, stirring frequently.
  8. Add cream, stir and simmer for about 40 minutes until sauce thickens
  9. With approximately 15 minutes of cooking time remaining, preheat your broiler and place the marinated chicken pieces on a wire rack or lined baking sheet. Grill until you see the chicken begin to lightly blacken; about 10 minutes Cut chicken strips into small pieces and add to the sauce
  10. Simmer for about 10-15 minutes to make sure the chicken is fully cooked.
